The cooking process
Once you’ve prepared the rice properly, it’s time to cook. Place the rice and liquid (water or broth) in a medium saucepan with a lid. Add a tablespoon of butter or olive oil and a teaspoon of salt. Bring the liquid to a boil over medium heat with the lid off. For white rice: cover, reduce heat to medium-low, and simmer until the liquid is absorbed—about 15 to 20 minutes. For unsoaked brown rice: simmer for 45 to 50 minutes. If you soaked your brown rice, cook it covered for 20 minutes.
